Ingredients for
Brazilian Black Bean Stew

  •  ¼ lb. chorizo sausage, chopped
  • ⅓ lb. cooked ham, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 lbs sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 29 oz. diced tomatoes
  • 1 serrano pepper, diced (optional)
  • 1 ½ cup water or stock
  • Salt to taste
  • 30 oz. black beans, cooked
  • 1 mango, diced
  • ¼ cup fresh cilantro, chopped

How to Make
Brazilian Black Bean Stew

  1. In large pot, saute chorizo and ham for 2-3 minutes.
  2. Add onions and cook until tender.
  3. Add garlic and cook for 1 minute.
  4. Stir in sweet potatoes, bell pepper, tomatoes, serrano pepper, water/stock, and salt. Bring to boil
  5. Reduce heat to low and cover. Simmer ~30 minutes until sweet potatoes are soft.
  6. Stir in beans and cook uncovered until heated through.
  7. Add mango and cilantro before serving.
