Ingredients for
Brazilian Black Bean Stew
¼ lb. chorizo sausage, chopped
⅓ lb. cooked ham, chopped
1 onion, chopped
2 cloves garlic, minced
2 lbs sweet potatoes, peeled and diced
1 red bell pepper, diced
29 oz. diced tomatoes
1 serrano pepper, diced (optional)
1 ½ cup water or stock
Salt to taste
30 oz. black beans, cooked
1 mango, diced
¼ cup fresh cilantro, chopped
How to Make
Brazilian Black Bean Stew
In large pot, saute chorizo and ham for 2-3 minutes.
Add onions and cook until tender.
Add garlic and cook for 1 minute.
Stir in sweet potatoes, bell pepper, tomatoes, serrano pepper, water/stock, and salt. Bring to boil
Reduce heat to low and cover. Simmer ~30 minutes until sweet potatoes are soft.
Stir in beans and cook uncovered until heated through.
Add mango and cilantro before serving.
